Before speaking about the cuisine of Empoli, we should point out that there are no real recipes or products that are exclusively typical of our area. In fact, all the most important examples of Florentine cuisine can be found in Empoli, such as Ribol-lita (or Bread Soup), Pappa al pomodoro (tomato and bread soup), crostini with chicken livers, Flor-entine steak, Panzanella, cantuccini with vinsanto and many other Tuscan specialties. So, the dishes we present here are not exclusively from Empoli, but they do best represent our culi-nary tradition.

Empoli-style chops

This is a modest but very tasty dish! In this recipe with a homemade flavor, classic veal or pork chops are breaded, dipped in egg, fried and then cooked in a stew, i.e. with a tasty tomato, garlic and parsley sauce. A couple of slices of good Tuscan bread on the side, and that’s it!

Rabbit and fried artichokes

Inexpensive meat, which in the past often came directly from the producer’s own small farm, paired with artichokes, the prince of Empoli’s culinary tradition. The procedure here is simple, just bone the rabbit, cut it into small pieces, bread it and fry it. At the same time, clean and segment the artichokes and fry them as well. A version of this dish is sure to be on the menu of every osteria or typical restaurant in Empoli.

Snails and Frogs

For those who want to try something different, we recommend looking for dishes made with these unusual creatures on the menus of trattorias and at the culinary festivals held during the summer season.

The cleaned and purged snails are usually stewed with tomato sauce. The frogs, on the other hand, are fried practically whole. If you have the courage to try them, you won’t be disappointed!
